About: The 2023 Grand Mouton is crafted from estate-grown Melon de Bourgogne, primarily from vines over 70 years old. The vineyard is situated in the commune of Saint-Fiacre-sur-Maine, between the Sèvre and Maine rivers, on soils composed of gneiss, granite, and amphibolite, which impart a distinctive minerality to the wine. The estate practices sustainable viticulture, with hand harvesting and minimal intervention in the cellar. After fermentation using native yeasts, the wine undergoes aging on its lees in concrete and glass vats over the winter, a traditional "sur lie" method that enhances texture and complexity. The wine is then siphoned off from above its lees without stirring or filtering, preserving its purity and character.
